21 CROCKPOT MEALS! (Master List and How-To Preparation)

Yesterday my girlfriend Robin came over and we spent SIX HOURS in the kitchen.



But, our story begins about a month ago.  I was standing in my kitchen (crying) because I hated the fact that I was cooking dinner while my 4.5 month old (at the time) was playing.  I thought to myself, why on Earth am I cooking right now?!  This little baby is so happy and playing...and I am missing it.

I started surfing Pinterest (after he went to bed that night, and I stopped being emotional) to find crockpot recipes to make my evenings a little less occupied.  I found this pin that lead me to this blog that got me thinking - I bet I could save money AND time in the long run if I spent a day prepping. 

In comes my email to Robin (who has a three year old and is way preggers right now) soliciting help in this new venture.  Most crockpot recipes will feed 4 adult dinners with one or two leftover lunches.  My email asked for her to pick 10 crockpot recipes and I would pick 10.  We would consolidate the lists, split the cost and split the meals.

After we consolidated everything to one master Excel list (submit a comment here and I will email you the document), Robin bought all the canned, non-perishable goods and frozen foods earlier in the week.  I bought all the meats at Sam's Club and the fresh produce the morning of.

We spent the day laughing and having girl time while we chopped and diced and sliced and cut and boiled and sauteed and pureed until we felt like we could chop, dice, slice, cut, boil, sautee and puree no more. 

It was a great time, a LOT of work, but think about how easy these meals will be now that both of our freezers are STUFFED to the gills.

A few special words of note:
           All the recipes listed are the FULL recipe.  If you make it as-is it will feed a family of 4 (with lunch leftovers).  If you are doing this experiment by yourself, either cut each recipe IN HALF, or SPLIT every meal between TWO bags. 
           Don't forget the purchase one-gallon freezer bags before you start.  You'll need 40.  And, don't skimp and buy the generic brand.  Nobody likes freezerburn.

SOUP
These soups have been cooked (no crockpot necessary).  Simply remove from the container and heat up.  (I prefer the stove top method, but if you are putting in plastic containers, you could probably nuke it, too).
 
MAKE-AHEAD MEALS
While these are also not crockpot recipes, they are great pre-prepped, fast meals

So there you have it!  With a little bit of patience and a lot of space in the freezer, I can now throw on the crockpot a few times a week and gain my evenings back to spend with my family :)
 

 


Crockpot Meal: Spinach, Tortellini and Sausage

1 (19oz) bag frozen cheese tortellini
1 lb sausage, browned
1 bag fres spinach
2 cans Italian Style diced tomatoes
2 cans low-fat chicken broth
1 (8oz) package cream cheese, cubed

Brown the sausage, drain fat (ew, gross!)
Add all ingredients to freezer bag and freeze

When ready to eat:
Put froze mixture in crockpot
Cook on LOW 5 hours

Stir several times during cooking

Crockpot Meal: French Dip

3 lbs beef chuck roast (two, 1/2 lb pieces)
2 (14.5 oz) cans beef consomme

Use two freezer bags for this one...
1 gigantic hunk of meat in each bag
1 consomme in each bag
Freeze

When ready to eat:
Thaw in fridge for 24 hours
Cook on HIGH 5-7 hours
Shred with 2 forks
Save the extra juice for dipping

Serve with 3-4 hoagie buns, and provolone or swiss cheese

Crockpot Meal: Beef Tips and Gravy

1/2 pound stew meat
1 packet dry onion soup mix
1 can Cream of Mushroom Soup
1 (14oz) can beef broth
Salt and pepper to tase

Combine soup, onion mix, broth, salt and pepper until well mixed into one gallon freezer bag
Add beef cubes and mix until well coated
Freeze

When ready to eat:
Thaw in fridge for 24 hours
Cook on LOW 6-8 hours

Serve with dinner rolls and a fresh salad

Crockpot Meal: Beef Stew

1 lb beef stew cubes
4 carrots, peeled and sliced
4 red potatoes, cut in large cubes
1 package dry onion mix
2 cans Cream of Mushroom Soup
1 (8oz) can tomato sauce
1 (10oz) packate frozen green peas

Add all ingredients to one gallon freezer bag and freeze.

When read y to eat:
Thaw in fridge for 24 hours
Cook on HIGH 5-6 hours

Serve with dinner rolls or egg noodles and a fresh salad

Crockpot Meal: Turkey Chili

1 lb ground turkey, sauteed
1 medium onion, chopped
1 (15oz) can black beans, undrained
1 (15oz) can pinto beans, undrained
1 (15oz) can diced tomatoes, undrained
1 (11oz) can whole kernel corn, undrained
1 (10oz) packet dry ranch dressing mix
1 packge spicy taco seasoning

Sautee turkey and onion
Combine with all other ingredients in large bowl until well mixed.
Divide into (2) one gallon freezer bags and freeze

When ready to eat:
Add to crockpot still frozen
Cook on HIGH 5 hours or LOW 7-8 hours

Serve with cheddar cheese over rice, or with tortilla chips

Crockpot Meal: Honey Sesame Chicken

1 lb chicken
3 T EVOO
1 Cup honey
2 T Sesame seeds
1/2 cup Soup Sauce
1 T sesame oil
1 tsp salt
1 tsp pepper

Combine all ingredient in one gallon freezer bag and freeze.

When ready to eat:
Thaw in fridge for 24 hours
Cook on LOW 4 hours
Shred chicken
Cook on HIGH 1 hour

Serve over hot rice

Crockpot Meal: Chicken Teriyaki

6 carrots, peeled and chopped
1 red onion, cut into large chunks
2 large cans of pineapple, undrained
4 garlic cloves, minced
4 chicken breasts
1.5 cups teriyaki sauce

Combine all ingredients into one gallon freezer bag and freeze.

When ready to eat:
Thaw in fridge for 24 hours
Cook on LOW 6-7 hours

Serve over hot rice

Crockpot Meal: Chicken Tacos

1 lb chicken
1 large jar chunky salsa
1 packet taco seasoning

Combine in one gallon freezer bag and freeze.

When ready to eat:
Add frozen mixture to crockpot
Cook on HIGH 4 hours

Serve with:
All the fixins' of a yummy taco!
     Tortillas, cheese, sour cream, guacamole, taco sauce...yum!

Crockpot Meal: Chicken and Dumplings

4 chicken breats
1 can Cream of Chicken Soup
1 can Cream of Celery Soup
1 can (14oz) chicken broth
1 tsp poultry seasoning
1 tsp seasoned salt
1 tsp parsley
1 tsp pepper
1 bag frozen vegetables
1 can refridgerated biscuit dough

Combine all soups and chicken broth, add seasonings until blended together to one gallon freezer bag and freeze.

When ready to eat:
Thaw in fridge for 24 hours
Cook on LOW for 4 hours
Separate refridgerated biscuit dough and place in crockpot and push dough into liquid (dough will float)  Cook until biscuits rise and are cooked through, about 1.5 hours.

Crockpot Meal: Chicken and Broccoli Alfredo

1.5 lbs Chicken breast
1 (16oz) bag frozen broccoli florets
2 (16oz) jars alfredo sauce
1 large green pepper, chopped
4 oz portobello mushrooms, chopped

Combine all ingredients in one gallon freezer bag and freeze.

When read to eat:
Thaw in fridge for 24 hours.
Cook on LOW 4-6 hours
       Serve with fresh fettucine noodles

Crockpot Meal: BBQ Cranberry Chicken

2 lbs chicken breasts
1/2 Cup dried minced onion
1 (16oz) can whole cranberry sauce
1 Cup barbecue sauce (I used Sweet Baby Ray's)

Combine all ingredients in gallon-sized freezer bag and freeze.

When ready to eat:
Thaw in fridge for 24 hours.
Cook on HIGH for 3-4 hours or LOW for 6-7 hours.

Crockpot Meal: Applesauce BBQ Chicken

4 boneless, skinless chicken breats
1/2 T ground pepper
2/3 Cup chucky applesauce
2/3 Cup BBQ Sauce (I used Sweet Baby Ray's Brown Sugar/Hickory)
2 T brown sugar
1 T chili powder

Combine all ingredients unti covered.  Freeze

When ready to eat:
Thaw in fridge for 24 hours
Spray crockpot with non-stick cooking spray (or use a crockpot liner) for easy cleanup
Cook on LOW for 6-8 hours

Crockpot Meal: Pork Tenderloin with Apple Cranberry

2 lbs pork tenderloin
1 tsp salt
1 tsp pepper
1/2 Cup brown sugar
2 T cider vinegar
1 tsp ginger
1 tsp cinnamon
1/2 txp red pepper flakes
1/2 Cup dried cranberries
3 Granny Smith Apples, peeled and chopped

Combine everything in freezer bag, mix around so that the apples and pork are covered.

When ready to eat:
Thaw in fridge for 24 hours.
Cook on LOW 6-8 hours
       SERVE WITH Egg noodles or fresh mashed potatoes

Crockpot Meal: Pineapple Glazed Ham

4 thick slices of boneless ham
1/2 cup brown sugar
1 (20oz) can crushed pineapple, UNdrained
2 Tbsp Dijon mustard

Mix together brown sugar, pineapple and mustard in gallon freezer bag.
Place ham slices inside and zip bag closed.

When ready to eat:
Thaw in fridge for 24 hours
Cook on HIGH for 3 hours or LOW for 5-6 hours

Crockpot meal: Creamy Ranch Pork Chops and Potatoes

1.5 lbs pork chops, boneless (about 4-6 chops, thick sliced)
6-8 medium potatoes, chopped into large pieces
2 (10.75 oz) cans Cream of Chicken Soup
2 (1oz) packages dry Ranch dressing mix
1 Cup milk
Dried parsley

In a bowl, mix together the soups, milk and ranch dressing mixes
Pout into gallon-sized freezer bag
Combine all other ingredients together and zip closed.

When ready to eat:
Remove from freezer and thaw in fridge for 24 hours.
Cook on HIGH for 3-4 hours or LOW for 6-7 hours
       Use the extras sauce in the slow cooker as a gravy for the potatoes

Make-Ahead Meal: Homemade Sloppy Joes

1 lb ground beef
1/2 Cup diced onion
1/2 Cup ketchup
1 Tbsp vinegar
1 Tbsp Spicy Mustard
1 Tbsp sugar
1 Tbsp Worcestershire sauce

Brown ground beef and onion
Drain (ew, gross!) and return to pan.
In bowl or 2C Liquid measuring cup, combine all of the other ingredients.
Pour mixture over ground beef
Mix until beef completely coated

NOTE:
When Robin! and I decided to do this mass preparation of 21 crockpot meals, we tripled the recipe.  We each went home with 1 pound and had the last bit for lunch (shared with the hubs).

Make-Ahead Meal: Shepherd's Pie

1lb ground beef
(1) 10.5oz can Cream of Celery Soup
1/2 onion, diced
1 Cup shredded Cheddar Cheese
2-3 Cups mashed potatoes
1 packaged frozen mixed vegetables

Make mashed potatoes
Brown the ground beed in skillet over medium-high heat.  Drain fat (ew, gross!)
Mix in vegetables, soup and onion. 
Pour beef mixture into 8x8 baking pan
Top with cheddar cheese
Spread mashed potatoes on top, covering beef mixture completely


When read to eat:
Thaw in refridgerator approx 24 hours
Bake 350deg for approximately 40 minutes

Make-Ahead Meal: Cheddar & Cracker Chicken

16 Ritz crackers, crushed
6 ounces shar Cheddar, grated
1 clove garlic, finely chopped
2 stalks of scallions, thinly sliced
kosher salt and black pepper to taste
(4) 6-oz conless, skinless chicken breasts
4 tsp unsalted butter, melted

In a bowl, combine crackers, cheese, garlic, scalliions, salt and pepper.
Pound chicken to about 1/2 inch thickness
Dip pounded chicken in butter, then cracker mixture.
Place chicken in fallon-sized freezer bag, seal and freeze flat.

When ready to eat:
Place on baking sheet and drizzle with melted butter.
Bake at 350deg for 30-35 minutes

Soup - Homestyle Chicken and Rice

1 pound chopped chicken breast, sauteed in salt pepper and EVOO
1 bag froxen mixed vegetables
4 T butter
1 box chicken stock
1 cup rice

Preparation:
Sautee chicken breast
Add chicken, mixed veggies and butter in freezer copntainer with chicken stock.

When ready to eat:
Thaw and cook on stovetop until boiling.
Add rice and simmer for 20 minutes.

Soup - Cauliflower and Cheese

1 medium-large potato, peeled and diced (approximately 2-3 cups diced)
1 large cauliflower, hand broken into floets (put aside 2 cups)
1 medium carrot, peeled and chopped
3 medium cloves garlic, peeled
1 1/2 Cups chopped onion
1 1/2 tsp salt
4 Cups water
2 Cups grated cheddar cheese
3/4 Cups milk
1 tsp dill
1/2 tsp caraway seeds
black pepper to taste

Place potato, cauliflower (except 2 cups reserved), carrot, garlic, onion, salt and water in a large saucepan and bring to boil.  Simmer until all vegetables are very tender
Puree in food processor and transfer to large pot.
Steam the reserved cauliflower pieces until just tender
Add these to puree along with cheddar cheese, milk, dill, caraway seeds and papper.
Heat gently and serve with cheddar cheese garnish

Crockpot Soup - Broccoli Cheese

2-3 large heads of broccoli (chopped into bite sized florets)
1 large onion, diced
2 cans Cream of Mushroom soup
1 can milk
2 cans evaporated milk
salt and pepper to season

Cook on HIGH 3 hours
Blend approx 2 cups of soup until broccoli has broken into small pieces, add back to crock pot and stir to combine
Cook on HIGH 1 hour

SERVE WITH
Cheddar cheese for topping
Fresh Baguette
